宫保鸡丁

材料:去骨鸡腿一只,蒜头3粒,干辣椒4支,花椒粒1/4茶匙,葱2只,姜2片,蛋1个
腌肉料:蛋白1/2个,水1茶匙,太白粉1/2茶匙,盐少许
调味料:糖1/4茶匙,醋1/2茶匙,酱油1茶匙,酒1茶匙,番茄酱1/2茶匙,酱色1/4茶匙,太白粉1/4茶匙,水1/2茶匙,盐少许
 
做法:
1)鸡腿肉内面用刀轻垛几刀后,切小丁,用腌肉料扮腌5分钟
2)姜、蒜切成末,葱、干辣椒切成小段。姜末、蒜末、葱段与调味料先在大碗中调成调味汁
3)锅中加油一小杯,烧至中温油,倒入肉丝,快炒成肉色变白,捞出
4)倒出锅中油,只留油1茶匙,烧热,先爆香干辣椒及花椒粒,待干辣椒炒至深褐色、出香味后,加入鸡腿丁炒散,加入调味汁,快速炒拌均匀即可。
