咸酥虾

材料:沙虾(剑虾)半斤,葱2支,蒜头5粒,辣椒1支
调味料:盐1/4茶匙,味精1/2茶匙,胡椒粉少许
做法:1)虾去沙筋,头剪齐,洗净,沥干水。
         2)葱、蒜头、辣椒均切末。
         3)锅中加油2杯,烧热,放入沙虾,大火炸约1分钟,捞出,待油再烧热,放入沙虾炸约30秒,捞出,沥油。
         4)倒出炸油,留油1茶匙,烧热,爆香2,放入3及调味料,炒匀即可。
注意:炸虾时要炸两次,第一次炸至虾浮起时即捞出,待油再烧热,再炸第二次,虾才会酥,否则虾肉会老而硬,且皮不酥香。
